Soft Sugar Cookies

Zac made these last night.  They are his favorite to make because he loves sugar cookies but doesn't want to take the time to roll and cut.  He is becoming quite the cook :)

2/3 cup shortening
2/3 cup butter
1 1/2 cups white sugar
2 eggs
2 tsp. vanilla extract
3 1/2 cups flour
2 tsp baking powder
1 tsp salt

Preheat oven to 350.

In a mixing bowl, cream together butter, shortening and sugar.  Stir in the eggs and vanilla.

Combine the flour, baking powder and salt.  Add to the creamed mixture.  Mix just until the dough comes together.  Drop scoops onto an ungreased cookie sheet.

Bake for 10-12 minutes (until bottoms are lightly browned).  Quickly take a cup and press the cookie flat.  Let cool for just a minute on the sheet and then remove from cookie sheet to cool.

They are good plain or you can even roll the cookies in sugar before you bake them.  We love to put butter cream frosting on them.

Monster Cookies

Monster Monster Cookies Recipe

I spend way too much time on Pintrest.  But then I find a recipe like this one, Monster Cookies, and I feel validated :)

Ingredients:

1 c vegetable shortening
2 c brown sugar, lightly packed
1 1/2 granulated sugar
3 c creamy peanut butter
1 tsp vanilla extract
6 eggs
4 tsp baking soda
9 c old-fashioned oats
2 c m & ms
2 c chocolate chips

Directions:

Preheat oven 375 degrees.
Cream together the shortening and both sugars.

Stir in peanut butter and vanilla.

Beat in eggs.

Stir in baking soda and oats.

Mix in M & Ms and chocolate chips.

Using teaspoon, spoon mounded dough onto cookie sheet.

Bake 7-9 minutes. Allow to cool some before removing from cookie sheet and transferring to plate.

Overnight Sourdough Waffles or Pancakes

This recipe comes from the book The Bread Lover's Bread Machine Cookbook.  I love it.  I got a sourdough start from King Arthur's Flour last year and have used it pretty much just for this recipe.  To make pancakes instead of waffles, just omit the melted butter.

Ingredients:

For the sponge (this sits over night)

1 cup warm water
1 cup evaporated milk (I use 1 cup water and 2/3 cup powdered milk)
1/2 cup sourdough starter (see above)
2 cups flour (I use 1 cup wheat flour and 1 cup white flour)

Combine all this together in your bread machine (I am sure you could just put it in a bowl and not use a bread machine).  Put it on the "dough" setting and let it mix for 10 minutes.  Unplug the machine and leave overnight.

In the morning add:

2 large eggs, beaten
2 Tbsp maple syrup or honey
1 Tbsp olive oil
1 tsp baking soda dissolved in 1 Tbsp water
1/2 tsp baking powder
1/2 tsp salt
2 Tbsp melted butter (leave out the butter if just doing pancakes)

Mix well.  Pour into Belgium Waffle Maker and bake till desired done-ness.  Some like them crunchy and some like them soggy in my family :)

No bake Oatmeal Cookies

A recipe I have had since my grade school, 4H days. This recipe comes from Angela Sasser.

Ingredients:

2 cups sugar
1/2 cup milk
1/2 cup butter
3 Tbsp cocoa
1 tsp vanilla
1/8 tsp salt
3 cups oats (I like old fashioned)
1 cup coconut
*about 1/4 cup peanut butter (original recipe does not call for this)

Directions:

Combine sugar, milk, margarine, cocoa and salt in a saucepan and bring to a boil, stirring.  Remove from heat.  Add vanilla and peanut butter; stir till dissolved.  Add oats and coconut; stir well.  Drop by spoonful onto wax paper and cool.
Angela's original recipe from 4H (1980 something;)

Frozen Peaches

This is something I learned from my Grandma Christensen.  My family would be lost with out them.  Every year, when peaches are in the height of their season, we buy boxes of them out in Caldwell.

Ingredients:

peaches
sugar
fruit fresh
quart size freezer bags (or whatever size you want to freeze yours in)

Directions:

Blanch peaches in hot water for about 30 seconds.  Remove them and immediately place them in ice cold water to stop them from cooking (I just fill my sink with water and add a pitcher of ice).  Slip the skins off of the peaches, remove the pit and slice them.  Mix 4 cups of sliced peaches with a 1/2 cup sugar and about 1 tsp fruit fresh.  Mix well and place in freezer bags.  I put about 3 cups per bag.  I stack all the bags in the freezer and then pull a bag out when we went them over "couch" (german pancakes), waffles, pancakes or in smoothies.  To thaw them quickly, place the bag in a bowl of hot water.

Couch (aka German Pancake)

My children wouldn't even know what it meant if I told them we were going to have German Pancakes for breakfast.  The first time I made it when Mattie and Zac were very small, they said "it looks like a couch".  That has been its name ever since.  Their favorite way to eat them is with frozen peaches (something I learned from my Grandma). Some like the edges (Mattie and Paige).  Some like the center (Zac) and Summer doesn't care (big surprise).

 Ingredients:

1 cup milk
1 cup flour
6 eggs
1/4 tsp salt
2 Tbsp butter

Preheat oven to 425.  Beat the eggs and add the milk, flour and salt.  Put the butter in a 9x13 dish and place in the oven to melt.   Once it is melted, pour the batter into hot dish and return to oven.  Bake for 20-25 minutes.  Serve with syrup, jam, powder sugar, fresh fruit, yogurt and/or our favorite...frozen peaches (that have been thawed).

Flank Steak

Ingredients:

1/2 cup olive oil
1/4 cup soy sauce
1 Tbsp meat tenderizer
1 Tbsp Worcestershire sauce
1 tsp dry mustard
1 tsp pepper
1 1/2 Tbsp balsamic vinegar
1/4 cup parsley flakes
4 cloves crushed garlic
Flank Steak

Score the meat diagonally with a knife and poke several holes with fork on both sides of meat.  Place it in a gallon size ziploc bag and add the marinade ingredients.  Marinate in the refrigerator for 3 days (I usually only get about 1 day).  Grill to preferred done-ness.  It doesn't take long so watch closely.

Cheese Fondue

Cheese fondue, flank steak and the chocolate fountain have became a Valentine's Day tradition around here.  This year we even got an extra treat...chocolate flung all over Lance and the kitchen from the fountain.  Good Times:)  We dip the steak, bread, pretzels, broccoli, mushrooms, potatoes, apples...you name it...this recipe makes everything taste good.  The recipe is from Just get off your but and bake.

Fruit Fluff

So this name is a joke in itself.  My sister made a family cookbook years ago and put some recipes of my great grandmother, Mommy Chris, in it.  One was entitled "prune fluff"....gross!  But the name has brought a lot of laughs.  Consequently, not knowing what to call this mixture, it loving got named "fruit fluff':).

Ingredients:

1 cup whipping cream (unwhipped)
1 can sweet and condensed milk
couple scoops of yogurt (any flavor..personally like Vanilla Bean)
Lots of frozen blueberries, raspberries (and/or blackberris)

Whip the cream.  Stir in sweet and condensed milk and yogurt.  Gently fold in fruit.  Let it sit a while so berries will thaw.

Sugar Cookies

Got this recipe from Ashley Peay...a sweet girl I taught as a Beehive when Lance and I were first married and in the Broadway Ward.  She brought cookies to an activity and I loved them.  It has been the only recipe I have used for sugar cookies ever since.

Valentine Family Home Evening
Ingredients:

2/3 cup shortening
3/4 cup sugar
1 tsp. vanilla
1 egg
4 tsp milk
2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt

Cream shortening and sugar and vanilla together.  Add the egg; beat till light and fluffy.  Stir in milk.  Sift together dry ingredients and blend into creamed mixture.  Divide dough in half, wrap and chill for one hour.  Roll out on a lightly floured surface.  Cut into shapes and place on greased cookie sheet.  Bake at 373 for 6-8 minutes.  Don't over cook, edges should not be brown.  Immediately remove from pan so they don't continue baking.  Frost

Crockpot Cheesy Chicken Tater Tot Casserole

The recipe is found here at the Country Cook.

Blueberry Peach Salad

Is this a side dish or dessert.  Claim it as a side dish and then you still get to have dessert.

1/2 cup sugar
3 Tlbs cornstarch
2 cups milk
2 eggs, lightly beaten
1 1/2 tsp vanilla
2 peaches peeled and sliced
1 1/2 cups fresh blueberries
whip cream

Combine sugar and cornstarch in a saucepan.  Stir in milk and bring to a boil.  Cook and stir for 2 minutes until thick.  Remove from the heat.  Pour a small amount into a bowl...and slowly beat in the eggs.  Add it back to the saucepan and return to heat.  Bring to boil for 2 more minutes.  Remove from heat and add vanilla.  Refrigerate until cooled.  Layer with fruit and top with whipped cream.

Baked Zucchini Sticks and Sweet Onion Dip

This is just easier to link to the original site.  I could drink the dip:)  The fries aren't too shabby either.

King Arthur Flour Baked Zucchini Sticks and Onion Dip

Zucchini Casserole

I had this for the first time at Grandma Christensen's house.  I still remember standing there at her counter helping her make it (more like watching her).  This recipe is the main reason I grow Zucchini.  My girls love this!

Directions:

6 cups grated zucchini
1 cup grated carrots
1/4 cup grated onion

Cook the above in boiling water for 10 minutes and drain well.

Melt 1/2 cup butter (I only use 1/4 cup) and mix with 1 box of Stove Top Stuffing.  Put half of this on the bottom of a 7X11 greased pan.

Mix the following with the drained vegetables and pour on top of the stuffing mix.

1 can cream of mushroom soup
1 cup sour cream

Top with the remaining stuffing mix.  Bake at 375 for 30 minutes

Homemade Ranch Dressing Mix

Ranch dressing was a staple for Mattie when she was a toddler.  Paige and Summer have followed in her footsteps.  This recipe helps me feel a little better about them eating it on everything..

Ingredients:

Black Pepper ¼ C
Parsley Flakes 1 1/2 C
Garlic Salt ½ C
Kosher Salt 2 T
Granulated Garlic ¼ C
Granulated Onion 3/4 C
Dill Weed 2 T

Procedure:

1. Combine all ingredients, store in an airtight container. Makes about 3 ½ cups of dry mix
2. To Make Dressing, whisk together 2 T of mix with 2 Cups each of mayonnaise and buttermilk 1 ½ Cups sour cream (I substitute greek yogurt for half the sour cream), & 1 t Lemon Juice. Refrigerate for 2 hours. Makes 1 ¾ Quarts

The recipe came from The Crafty Blog Stalker.

Lemon Supreme Cake

From Courtney...she made it for my birthday once when we were at the cabin.  Loved it!

Lemon Supreme Cake
1 box lemon cake mix                                 4 eggs
1 (3 oz) pkg instant lemon pudding               1/2 c oil
1 tsp lemon juice                                        1/2 c sour cream
3/4 c orange juice                                      1 Tbl lemon zest
1 1/2 c powdered sugar                               1/4 c lemon juice

Preheat 350 degrees. Grease and flour bunt pan by making a paste of 1 Tbs melted butter and 1 Tbs flour and then apply it to bunt pan with a pastry brush, thoroughly coating the surface of the pan.

Combine cake mix, pudding, 1 tsp lemon juice, OJ, eggs, oil, sourcream, and lemon zest. Combine well, then beat on high speed for 3 minutes. Pour batter into pan.

Bake for 40 - 60 mins. or til toothpick inserted into the cake comes out clean.

While cake is baking, make lemon glaze: combine lemon juice and powdered sugar, stir until smooth. When you remove cake from the oven, poke holes in cake while still in the pan, then pourglaze over top of hot cake, tipping pan to allow excess glaze to run down sides of pan. Allow cake to cool in pan 10 minutes. Remove from pan and cool completely on a wire rack.

When cake is cool or shortly before serving, drizzle on Vanilla Glaze for prettiness:
1 1/4 C powdered sugar
2 1/2 Tbl milk
1/8 tsp salt
1/4 tsp vanilla
1 Tbl melted butter
1 Tbls corn syrup
Mix ingredients til creamy.

Bread Pudding

This is a recipe that Heidi found that came from this link.  This is best when served with ice cream and warm caramel sauce over the to!

French Quarter Bread Pudding Recipe

1 loaf of french bread
1/2 cup melted butter
3 eggs
1 cup half and half cream
1 1/4 cups milk
1/2 tsp cinnamon
1/2 nutmeg
1 cup sugar
1 tsp vanilla

  1. Preheat oven to 325 degrees F (165 degrees C). Cut bread into 1 inch thick slices. Arrange bread slices and pecans on a baking sheet and drizzle with melted butter; toast lightly.
  2. In a large bowl, beat together eggs, cream, milk, cinnamon, nutmeg, sugar and vanilla. Put bread and pecans in a lightly greased 7x11 in casserole dish. Pour egg mixture over bread. Make sure that bread slices are saturated with liquid.
  3. Bake in preheated oven for 60 minutes, until golden. Serve warm.

Baked Beans

No tailgate can go on without these.  Mom got this recipe from someone in her ward.

Cook 1lb. bacon -dispose of grease

Chop 3 full onions -blender works great!

Sauté onions in residual bacon grease

Blend in 32 oz. bottle of ketchup and mix in bacon

Add:
2tbls mustard
1cup maple syrup
1cup brown sugar
1/2 tsp cayenne pepper
3 tbls worchestire sauce
1/2 tbls liquid smoke

Candy for 1hour -then add 40 oz of Bushs Baked Beans (Mom and I have
decided this is way too little, we make it with at least double that
amount of Bushs Beans) from, Heidi

Golden Goo Chex Mix

I can't make this cause then I can't stop.  I got this from Kristi.....

I don't measure the mix stuff. I just pour some rice chex, corn chex, golden grahams, pretzels, coconut, sliced almonds, and m&m's to fill a large bowl. It's probably at least 2 cups of each cereal and pretzels.

Next I melt 2 cubes of butter in a large saucepan. Next add 1 and a half cups Karo syrup and 1 and a half cups brown sugar. Stir together and boil for 2 min. Take off the heat and stir in 1/2 tsp. vanilla. Pour it over your mix and stir it all together. Lay it out on wax paper to cool and eat!

You really can add anything to the mix to make it yummy. I add candy corn instead of m&m's sometimes too.

Happy Day!

Kristi

    Fried Rice

    t
Fried Rice is a favorite of Lance's and has become a love for Zac too.  I was always on a quest to find a good recipe.  I finally found a winner.  It is from a great site, Get off your butt and bake.  I could write the whole recipe but it is so much easier to just link to hers and then you can see all her fabulous pics...Fried Rice Recipe

    Apple Syrup

This recipe is from one of my favorite people, Susanne Ricks.

    1 cup sugar
    1/4 tsp. cinnamon
    2 Tbsp cornstarch
    1/4 tsp nutmeg

Mix above ingredients in a bowl.

    2 cups apple cider
    2 Tbsp lemon juice

Heat apple cider and lemon juice and add dry ingredients.   Bring to a boil and boil for 1 minute.

Stir in 1/4 cup butter and small diced apple chunks (I omitted the apple chunks).  Pour in jars and cover with sterilized lid.  Process for 20 minutes in a water bath canner, if using standard size pint jar.  You may reduce the processing time if the jars are small, but you must process at least 10 minutes.  May want to double since this recipe does not yield very much.

    Cinnamon Roll Coffee Cake

So this was one of the first things I ever pinned on Pintrest...the start of a really bad obsession.  It is on a site called Cookin up North.  With a few changes (which I will put in parenthesis) I am happy because it is healthier and my kids are happy because "This is soooooo good," says Zac.
    Cake:
3 c. flour (I substituted wheat flour for one of the cups)
    1/4 tsp.salt
    1 c. sugar
    4 tsp. baking powder
    1 1/2 c. milk
    2 eggs
    2 tsp. vanilla
1/2 c. butter, melted (I used half applesauce)

    Topping:
1 c. butter, softened (I used half applesauce)
    1 c. brown sugar
    2 Tbsp. flour
    1 Tbsp. cinnamon

Mix everything together except for the butter. Slowly stir in the melted butter and pour into a greased 9x13 pan. For the topping, mix all the ingredients together until well combined. Drop evenly over the batter and swirl with a knife. Bake at 350 for 28-32 minutes.

    Glaze:
    2 c. powdered sugar
    5 Tbsp. milk
    1 tsp. vanilla

While warm drizzle the glaze over the cake.

    Baked Overnight Oatmeal

I got this recipe from a RS food storage group.  After trying many other baked oatmeal recipes, this one is still our favorite.  I only sprinkle raisins on half the pan because, even though Zac likes raisins in most things, he does not like them in this :)

    Ingredients

    3 cups milk
    2 eggs, beaten
    3 Tbls. Melted butter
    1/2 cup brown sugar
    1 tsp vanilla
    1/4 tsp salt
2 cups old fashioned oats (if substituting quick oats do not refrigerate over night)
    1 tsp cinnamon
    Raisins

Combine all ingredients in a large bowl.  Pour into greased 2 qt. casserole dish  (I bake mine in a 9X13 when we are short on time in the morning).  Refrigerate overnight.

Heat oven to 350.  Bake, uncovered, for 40-50 minutes (about 30 minutes if in a 9X13).  Stir before serving.  Serve with milk

    Whole Wheat Muffins

I like to call these "Mattie's favorite Muffins".  I got this recipe from Cindy Hobson years ago at a food storage class.  Mattie fell in love with them.

    Ingredients

    1/2 c butter (I use 1/4 c applesauce and 1/4 c butter)
    1 c brown sugar
    1 egg
    2 cups whole wheat flour
    1 tsp baking soda
    1/4 tsp vanilla
    1 c milk
    raisins (optional)

Cream butter and sugar together.  Add the egg.  Add milk and flour alternately.  Add remaining ingredients.  Spoon into muffin pan.  Bake 12-15 minutes at 425 degrees.  Makes 12 muffins

    Caramel Brownies

A tailgating staplefrom Kim.  This is for a 9x13 pan.  Kim doubles it and puts it in alarge baking sheet.  It always overflows in the oven on  me so I putfoil down under pan so it doesn't make a huge smokey, stinky mess

    Ingredients

    50 carmels
    2/3 cup of evaporated milk
1 pkg. german chocolate cake mix
    1 cup nuts (optional)
3/4 cup butter or margarine, melted
    6 oz. package chocolate chips

In heavy saucepan, combine caramels and 1/3 cup of the evaported milk. Cook over low heat until melted, stirring constantly.  In large bowl, combine dry ingredients and mix other 1/3 cup of evaporated milk and meltedbutter until dough holds together.  Press 1/2 of the dough into pansprayed with Pam and bake at 350 for 6 minutes.  Reserve rest of dough fortop.  sprinkle chips over baked dough and then pour melted caramels overchips.  Press/crumble remaining dough to cover the top and return pan tothe oven to bake 15-18 minutes.  Cool before cutting.

    Granola Bars

These are one of Paige and Zac's favorite after school, before ballet, before sports snacks.
    Granola Bars

Combine following in saucepan.  Heat and stir until smooth and sugar is melted
    1/2 cup peanut butter
    1/2 cup corn syrup
    1/2 cup brown sugar

Add above to following that has been combined in a large bowl
    2 1/2 cup rice crispier
    2 cups old fashioned oats
Raisins or chocolate chips or both
Press into a greased 9x13.  Cool and cut into bars

    White Wheat Bread

    White Wheat Bread Recipe

I got this recipe from Pam.  It is fast, easy, uses all wheat and is really good.

    Ingredients:

    1/3 c. olive oil
    1/3 c. honey
    4 c. hot water
    2 1/2 T. yeast
10 cups whole wheat flour (give or take a bit)
    1 T. salt
    1/2 c. plus 2 T. gluten

Mix oil, honey, water, yeast and 4 cups flour in Bosch (or whatever mixer you prefer).  Let it sit and sponge for 15 minutes.  Add salt and gluten and 5 1/2-6 cups remaining flour.  Knead for 10 minutes.  Rest for 10 minutes.  Divide into 3 parts and shape into loaves.  Place in 3 greased loaf pans and raise for 30 minutes.  Put in oven that has not been preheated.   Set oven temperature to 350 degrees and bake for 30 minutes.  Cool for 5 minutes and remove from pan.  I like to rub the tops with butter.

    Potato Supreme

    -->
    -->
An all time Christmas Eve tradition.  We love it so much it has crept into our Thanksgiving Menu as well.  It will forever remind me of my Grandma Bonnie.  This is her recipe and one that recalls so many wonderful hours of joy in her kitchen and at her table.  Love you grandma...
    Ingredients

    3-4 medium sized potatoes
    Salt
    1 qt. cream

Peel and shred potatoes.  I put mine through my Bosch shredder attachment.  Place in colander and run cold water over them for at least 2 minutes (very important).  This rinses off the starch and keeps it from being runny.  Drain them well.

Put a layer of shredded potatoes in bottom of a greased 9X13 pan and sprinkle with salt generously.  Repeat the process, salting each layer, until dish is filled to within one inch of the top.

Pour unwhipped whip cream over potatoes until you can see cream through the potatoes (about 1 qt.)

    Pizza Rolls

This is one of my families all time favorites.  Over time I have tweaked it a bit.  I used to use frozen bread dough (as stated in the recipe) but now I just use a basic white dough for my bread machine.  It takes an hour and a half to make the dough in the machine and then it is all ready to be rolled out and spread with the hamburger mixture.

    Ingredients

    1 loaf frozen bread dough
1 lbs ground beef, browned (I use diet lean)
    1 tsp. salt
    1/2 tsp. pepper
    2 c. grated mozzarella cheese
    1 tsp. italian seasoning
    1 tsp. parsley flakes

Pizza or spaghetti sauce for dipping

Thaw dough (or use dough from bread machine); roll into a 14x24 rectangle about 1/4 inch thick.  Mix ground beef with all other ingredients, except sauce.  Spread hamburger mixture evenly onto dough.  Slightly press the mixture into the dough.

Roll it up lengthwise (like you would cinnamon rolls).  Cut into 1 inch slices.  Put each piece on a greased baking sheet.  Preheat oven to 400 degrees.  Let rolls sit for 10 minutes.  Bake for 20 minutes.  Serve with pizza or spaghetti sauce.
