Whole Wheat Muffins

I like to call these "Mattie's favorite Muffins".  I got this recipe from Cindy Hobson years ago at a food storage class.  Mattie fell in love with them.

Ingredients

1/2 c butter (I use 1/4 c applesauce and 1/4 c butter)
1 c brown sugar
1 egg
2 cups whole wheat flour
1 tsp baking soda
1/4 tsp vanilla
1 c milk
raisins (optional)

Cream butter and sugar together.  Add the egg.  Add milk and flour alternately.  Add remaining ingredients.  Spoon into muffin pan.  Bake 12-15 minutes at 425 degrees.  Makes 12 muffins
