Zucchini Casserole

I had this for the first time at Grandma Christensen's house.  I still remember standing there at her counter helping her make it (more like watching her).  This recipe is the main reason I grow Zucchini.  My girls love this!

Directions:

6 cups grated zucchini
1 cup grated carrots
1/4 cup grated onion

Cook the above in boiling water for 10 minutes and drain well.

Melt 1/2 cup butter (I only use 1/4 cup) and mix with 1 box of Stove Top Stuffing.  Put half of this on the bottom of a 7X11 greased pan.

Mix the following with the drained vegetables and pour on top of the stuffing mix. 

1 can cream of mushroom soup
1 cup sour cream

Top with the remaining stuffing mix.  Bake at 375 for 30 minutes
