This recipe is from one of my favorite people, Susanne Ricks.
1 cup sugar
1/4 tsp. cinnamon
2 Tbsp cornstarch
1/4 tsp nutmeg
Mix above ingredients in a bowl.
2 cups apple cider
2 Tbsp lemon juice
Heat apple cider and lemon juice and add dry ingredients. Bring to a boil and boil for 1 minute.
Stir in 1/4 cup butter and small diced apple chunks (I omitted the apple chunks). Pour in jars and cover with sterilized lid. Process for 20 minutes in a water bath canner, if using standard size pint jar. You may reduce the processing time if the jars are small, but you must process at least 10 minutes. May want to double since this recipe does not yield very much.
