An all time Christmas Eve tradition. We love it so
much it has crept into our Thanksgiving Menu as well. It will forever
remind me of my Grandma Bonnie. This is her recipe and one that recalls
so many wonderful hours of joy in her kitchen and at her table. Love you
grandma...
Ingredients
3-4 medium sized
potatoes
Salt
1 qt. cream
Peel and shred potatoes. I put mine through my Bosch shredder attachment. Place in colander and run cold water over them for at least 2 minutes (very important). This rinses off the starch and keeps it from being runny. Drain them well.
Put a layer of shredded potatoes in bottom of a greased 9X13 pan and sprinkle with salt generously. Repeat the process, salting each layer, until dish is filled to within one inch of the top.
Pour unwhipped whip cream over potatoes until you can see cream through the potatoes (about 1 qt.)
