Lemon Supreme Cake
1 box lemon cake mix 4 eggs
1 (3 oz) pkg instant lemon pudding 1/2 c oil
1 tsp lemon juice 1/2 c sour cream
3/4 c orange juice 1 Tbl lemon zest
1 1/2 c powdered sugar 1/4 c lemon juice
Preheat 350 degrees. Grease and flour bunt pan by making a paste of 1 Tbs melted butter and 1 Tbs flour and then apply it to bunt pan with a pastry brush, thoroughly coating the surface of the pan.
Combine cake mix, pudding, 1 tsp lemon juice, OJ, eggs, oil, sourcream, and lemon zest. Combine well, then beat on high speed for 3 minutes. Pour batter into pan.
Bake for 40 - 60 mins. or til toothpick inserted into the cake comes out clean.
While cake is baking, make lemon glaze: combine lemon juice and powdered sugar, stir until smooth. When you remove cake from the oven,poke holes in cake while still in the pan, then pourglaze over top of hot cake, tipping pan to allow excess glaze to run down sides of pan. Allow cake to cool in pan 10 minutes. Remove from pan and cool completely on a wire rack.
When cake is cool or shortly before serving, drizzle on Vanilla Glaze for prettiness:
1 1/4 C powdered sugar
2 1/2 Tbl milk
1/8 tsp salt
1/4 tsp vanilla
1 Tbl melted butter
1 Tbls corn syrup
Mix ingredients til creamy.
